Peanut Butter Protein Cupcakes

The most important part of training and gaining muscle is your diet, there is a saying which goes ‘abs are made in the kitchen’ now that doesn’t mean that the workout you do has no benefit it just means that no amount of training will outweigh a bad diet. So a good way to improve your diet is to change the foods you eat before and after training, we’re not saying you have to drink raw eggs and protein shakes after every workout..because that isn’t the nicest post workout snack . Today we thought we would share with you a yummy bake that you can make to fuel up after any training session as the high content of protein and absence of sugar makes it super healthy it can also be refrigerated so it’s great for on the go.

IMG_20150808_211145For this recipe all you will need:

  • 60g Protein Powder
  • 70ml Milk (preferably semi skimmed)
  • 30g Raw Cocoa Powder
  • 170g Greek Yoghurt
  • 1 small teaspoon Baking powder
  • 1 Egg
  • 1 Egg White
  • 50g Oat Flour/ Oats
  • 100g Natural Peanut Butter (based on preference)

Once all ingredients have been gathered and measured, excluding the peanut butter they are then all placed in a food processor and combined together. If you do not have a food processor, not to worry as you can also whisk it by hand though if you are using oats it is probably better to use a food processor as this refines the texture into a powder and helps the cake cook better. Once all ingredients have been whisked together and from a mixture with a runny consistency  you can them spoon them into cupcake cases (don’t worry we didn’t forget the peanut butter!). This mixture tends to make around 16-18 cupcakes as they cases are filled just over halfway. Now using a teaspoon pick up a heap of peanut butter at a time and place it into the middle of each cupcake. The size of each spoon may differ depending on how much peanut butter you want to add. When we make ours we do add quite a bit as this is our favorite part. Once they have all been filled you leave them to cook for around 15-17 minutes on an 150C oven and they’re done! These cupcakes taste best straight from the oven as this is when the peanut butter is melted but they can also be warmed up or enjoyed cold if you like, making them perfect for on the go as smoothies and shakes can be a bit more time consuming.
