Banana Protein Bread!

Finding something to eat after a workout that is high in protein and good for you can be quite tricky, that’s why we’ve made this recipe for the perfect post workout protein bread. There is a good amount of protein in here and not much sugar. It takes about 40 minutes to make and will give you several servings to last you a while.   • 150g Self raising flour
  • tbsp syrup or honey (optional)
  • 150ml milk
  • 30g butter or coconut oil
  • one ripe banana
  • 1 small cup protein powder (60g)
  • 1 egg

So to start with preheat the oven to 180 degrees and butter a tin. Measuring all the ingredients before hand makes it much easier when making the bread as you won’t have to worry about the measuring in between. Mash the banana in a bowl and melt the butter before adding to the mashed banana. To this mixture add all the wet ingredients so the egg, milk and syrup or honey if you desire that extra sweetness. This mixture will look a bit strange at first but don’t worry this is normal after you have added it to the dry ingredients it will begin to form a runny dough.IMG_20150728_113942

IMG_20150728_113811In a separate bowl add the two dry ingredients, the protein powder and the self raising flour. Add the wet ingredients to this bowl bit by bit. Once all has been added it should begin to form a slightly runny dough. Pour this dough into the buttered tin and place in the oven for 20 to 25 minutes or until golden brown. Once out of the oven leave to cool and cut into small slices. It can last up to 5 days in the fridge and can be frozen to last a lot longer. We would recommend freezing it to last longer if it is only for one person.IMG_20150728_113741
