Kale. Some of you may already about kale whilst others may not have a clue what it is and have only heard about it due to Beyonce’s admiration of this amazing superfood on her instagram and in her music videos. But B really knows what she’s talking about, as this food holds so many health benefits. These include its anti inflammatory properties, low calorific value and the large density of vitamins in just one serving. so for these reasons we’ve decided to incorporate it into our yummy protein packed vegetarian burgers keep on reading to find out exactly what’s in it!
There are not many steps involved in this recipe which makes it quite quick and easy especially if you work long hours. It can be stored in the fridge for a few days after, making it a quick and easy lunch or these burgers can be frozen in advance if you are someone who does not have a lot of time to cook making meal preparation that much easier. So there are no excuses for ordering a takeaway as this way you are also saving money in these cheap and cheerful burgers. The recipe yields around 15-18 burgers with each obtaining around 20g of protein making it a perfect post workout dinner.
The first thing you need to do is grab all your ingredients. To make the burger itself you will need:
- Dry roasted peanuts 50g
- Kale 100g (approximately two large handfuls)
- Feta Cheese 30g
- 2 Tins Pinto Beans (390g each)
- Cornflour 5 Tbsp
- Salt & Pepper (to taste)
- 2 Egg whites
- Vegetable Oil 3 Tbsp
Once you have gathered together all ingredients excluding the vegetable oil and 1 Tbsp of Cornflour, both of which will be used for cooking, they are all then placed in a food processor and combined. Once the texture resembles that similar to a dough you can then mould the mixture into patties approximately half an inch thick and store them in the fridge for a minimum of 20 minutes before removing them to cook. You may want to make smaller patties as well if you want to enjoy them as a little snack. Once taken out of the fridge each patty is covered in cornflour and placed onto a pan with a thin layer of vegetable oil. They are then cooked for around 2-3 minutes before being placed into the oven on a heat of 180C. The burgers require 5-7 minutes in the oven, then you’re done!
It was that simple. For serving we tend to enjoy our burgers with sweet potato fries, lettuce, tomatoes and onions but it is completely up to you. Sometimes we also serve it with a wholemeal bun, but if you are cutting down on carbs you may prefer to enjoy these burgers with a side of sweet potato fries instead which we have written a post on earlier if you would like to check it out.
